Avocado Brunch Stack

My absolute favorite breakfast and brunch classic: avocado toast. You can always add your favorite ingredients – lately, I have been using sprouts and arugula, oh and edible flower petals for color
INGREDIENTS
Cage free eggs
Ripe avocado for smushing
Broccoli or kale sprouts
Favorite bread – country french featured in this post, but I prefer a multigrain
Greens – I used arugula, but you can use any super green blend
Spices: Salt, tellicherry pepper and cayene pepper
Fry one egg at a time in a non stick pan. While your egg is sizzling away, lightly toast your bread (I used two slices) and mash half an avocado on each slice add salt, pepper and cayenne pepper to taste then start assembling. I added a generous amount of arugula and sprouts, then topped it with another avocado toast slice with more arugula an sprouts. Lastly, place your perfectly fried egg on top and accessorize with edible flower petals and enjoy. Once you put your fork into that yoke…it will ooze over the entire avocado stack and real brunch magic happens. Enjoy!
