Happy Saturday

Breakfast definitely is my favorite meal of the day…it brings back memories of my childhood. My mother worked crazy hours during the week, but on the weekends we would all go out for breakfast together. As an adult with a crazy, non-existent work/life balance, being lazy is my ideal way to spend weekend mornings. So cuddle up in bed or on your couch with a loved one, or in my case Lulu, the french bulldog, and enjoy your downtime.

Shopping List

  • Ezekiel or any sprouted grain bread
  • 1 ripe Avocado
  • 1 cage-free heir loom egg

Using a non-stick pan fry one of the eggs until edges turn golden. While frying your egg toast up your Ezekiel bread (I use the broiler function so it isn’t toast on both sides, provides a softer texture for the avocado and egg). Take one half of an avocado and lightly smush (yes, that is the technical term ) or spread onto the toast. Add seasoning, I use tellicherry cracked pepper from Penzeys spice, then very carefully transfer your perfectly fried egg onto your gorgeous avocado toast and voila! Breakfast is served. This breakfast is best paired with a nespresso and/or a mimosa. Happy Saturday!
